Chicken wings (fresh; must be thawed if using frozen)
1 tsp. per lb. of wings Kosher salt
1 tsp. per lb. of wings Baking powder

Directions:
Directions:
Add chicken wings to a large bowl. Add 1 tsp. of kosher salt and 1 tsp. of baking powder for every lb. of chicken wings that you have and toss to coat well. Cover and refrigerate over night or at the very least 1 hour.

Preheat oven to 250º.
Pat the wings dry with a paper towel.
Place a wire rack on a cookie sheet and place wings so that they DO NOT touch.
Bake at 250º for 30 min.
Flip wings.
Turn heat up to 425º and cook for an additional 40 min.

Take out of oven and season/sauce how you like.
