Step 1
1 whole chicken cut up and skinned
3 chopped tomatoes
3 tbsp. lemon juice
2 tbsp. of crushed garlic
2 tbsp. of crushed ginger
tsp. salt
1 tsp. crushed green chilies
bunch of coriander cut up
cup of water

Step 2 Curry Sauce
3 cans of coconut milk
bunch of coriander cut up
tsp. turmeric
1 tsp. of garlic
2 tbsp. lemon juice
tsp. green chillies
1 tsp. garam masala
tsp. of salt - Add later

Step 3
4 whole potatoes - boiled
6 boiled eggs

1. Wash the chicken thoroughly and put in a saucepan.
2. Add all the ingredients in Step 1.
3. On medium heat cook the chicken for 15 minutes until the chicken is no longer pink.
4. Transfer the chicken with about 4 tbsp. of liquid into an oven tray.
5. In the same saucepan with the rest of the liquid, add the ingredients of step 2 and boil for about 10 minutes on medium heat..
6. The coconut curry will start to thicken. .
7. Take a cup of the coconut curry and pour over the chicken.
8. Preheat the oven's broiler and set the oven rack about 6 inches from the heat source..
9. Broil for about 10 minutes on each side brushing with the sauce until the top is brown, then flip the chicken. Turn of the broiler.
10. Transfer the chicken and the juices in the coconut curry and reduce the heat to simmer.
.11. Taste the sauce to see if it needs more chilies, salt or lemon juice. Add more if needed according to your preference.
10. Boil potatoes (ensure the potatoes are not overcooked) and eggs separately.
11. Peel potatoes, cut into 2 parts and add to the curry and simmer for about 5 - 10 minutes.
13. Add the boiled eggs to the kuku paka, sprinkle cilantro and a pinch of garam masala when serving.

Kuku Paka is a dish from the coast of East Africa. A lot of the dishes originating from the coast are cooked with coconut milk.Coconut milk is also used to cook staple foods like rice, fish currries, cassava, spinach, beans, yams, bananas, mkate mimina and maandazi
