1 1/2 c. flour
1/2 c. milk
3 eggs
1/4 tsp. nutmeg
1 tbsp. chopped parsley
salt and pepper to taste
1 qt. chicken broth
4 oz. butter

Directions:
Directions:
1. Put chicken broth in pot and let come to a boil.
2. Meantime, put all ingredients in mixing bowl, with exception of butter, and mix well with wooden spoon.
3. When broth is boiling push substance through colander into the broth, let simmer for 5 minutes, stirring occasionally and strain.
4. Heat butter in sauté pan to hazelnut color, toss spaetzles in hazelnut butter and serve.

Note: if spaetzles are to be used in soup, do not toss them in butter.

Spatzen or Spaetzles are German egg dumplings. They are good at any time, but particularly good when served with roast veal, beef stroganoff, or as a garnish in soups.
