3 c. beef stock
2/3 c. liquid from pickle jar
2 cubed raw potatoes
2 tbsp. margarine
4 large dill pickles, grated
1 c. mashed potatoes
Salt and pepper to taste
1 c. sour cream

Directions:
Directions:
1. In large saucepan or soup pot, bring to boil the beef stock, pickle liquid and cubed potatoes. Reduce heat, cover and cook until potatoes are tender, about 20 minutes.
2. Add margarine and grated pickles. Add mashed potatoes and salt and pepper to taste. Stir and cook until smooth, about 5 minutes.
3. Add sour cream, blending in thoroughly and stirring until soup is heated through, about 5 minutes.
