3 cups grated sweet potatoes
1½ cups sugar
½ teaspoon nutmeg
1 teaspoon cinnamon
1 teaspoon vanilla
¼ teaspoon salt
2½ cups flour
1 cup grated coconut
½ - 1 cup water
1 cup raisins (optional)
2 tablespoon cooking oil

Directions:
Directions:
1. Preheat oven to 350ºF.
2. Put grated sweet potatoes, sugar, nutmeg, cinnamon, vanilla salt and flour into a bowl.
3. Add oil
4. Mix together. Add half cup of water. The mixture should be a thick sludge, not runny.
5. Pour mixture into a greased 9-in baking pan.
6. Bake for 1½ hours.
7. Cool, cut and serve.
