2/3 cup sugar
5 T all purpose flour
1/4 tsp salt
2 cups whole milk
3 egg yolks slightly beaten
1 cup coconut
1 tsp vanilla
2 T butter
1 baked pie shell

Directions:
Directions:
Combine sugar, flour and salt in a large saucepan. Stir in milk gradually. Bring to a boil, stirring constantly. Lower heat and cook until thick. Remove 1/4 cup of mixture and combine with egg yolks, stir, and return to hot mixture in pan. Cook for another two minutes, stirring constantly. Add coconut, vanilla and butter. Pour into baked pie shell.

Meringue

5 egg whites (you can use 3 but 5 makes higher meringue) room temp.
8 T sugar (6 if using 3 egg whites), 1/4 tsp cream of tarter, 1/2 teas vanilla.

Beat egg whites, vanilla and cream of tartar until stiff; then add sugar 1 T at a time.
Spread on pie and sprinkle with coconut. Bake in 325 degree oven for 15 to 20 minutes or until meringue is slightly brown.
