2 lb yellow squash, cut in small pieces
1 medium minced onion
3 tsp oleo
½ tsp salt
1 cup cracker crumbs
dash pepper
1 cup grated cheddar cheese
½ cup milk
1 egg

Directions:
Directions:
Cook squash and onion until tender. Remove from heat; drain. Mash until it is in very small pieces. Add salt, pepper and oleo. Add cracker crumbs, half the grated cheese, milk and egg. Stir until well blended. Pour into casserole. Sprinkle remaining cheese over top. Bake at 350 for 20 minutes. Serves 8
