1 1/2 pounds peeled russet potatoes, cut into 1-inch chunks 1 1/2 pounds peeled sweet potatoes, cut into 1-inch chunks 1/4 cup canola oil 2 teaspoons garlic powder 2 teaspoons onion powder 1 1/2 teaspoons kosher salt 1 1/2 teaspoons black pepper

Preheat oven to 425°F. Toss potatoes with oil, garlic powder, onion powder, salt, and pepper in a large bowl until well coated. Spread in a single layer on a large rimmed baking sheet, and top with thyme sprigs.

Bake in preheated oven until browned and crispy, about 25 minutes. Let cool 5 minutes before serving
