2 lb. lean ground beef
1 c. fresh bread crumbs
½ c. crushed Ritz or Townhouse crackers
2 eggs, lightly beaten
¼ c. milk
½ to 1 c. finely chopped onion
2 cloves minced garlic or 1 T. garlic powder
1 T. Penzey's Tuscan Sunset or Italian Mixed Herbs
1 T. Worcestershire sauce
salt and pepper to taste
¼ c. ketchup plus more for topping

Preheat oven to 350º. Put bread and cracker crumbs in a large bowl, add milk and allow to soak for a few minutes. Add remaining ingredients; mix all with a wooden spoon or your hands until thoroughly combined. Butter a 9 x 13 inch baking dish. Form meat mixture into a loaf lengthwise in the center of the dish (alternatively you can form 2 smaller loaves). Spread ketchup over the top of the loaf. Bake for 1 hour.

I truly love good meatloaf and after a lot of so-so attempts this is my favorite recipe. If you're a fan of green peppers you can add some chopped ones to the mix, and/or a 1/4 cup each of shredded mozzarella and grated Parmesan cheese. My husband loves it best when I scatter quartered red potatoes around the loaf and let them oven roast with it.
