1 Tbsp Dijon Mustard
Salt and fresh ground pepper
2 Tbsp minced chives, parsley, basil it thyme or any combination.
1/3 cup red or white wine vinegar
2/3 cup GOOD olive oil.

Directions:
Directions:
In a bowl mix together the mustard,salt, pepper and herbs.
Add the vinegar and whisk to create a smooth vinaigrette.
Slowly whisk in the oil.
Taste, adjust salt and pepper.
Lasts about four days in refrigerator.

Variations
Smash a clove of garlic, turn into garlic paste.
Add 1 to 2 Tbsp milk, cream, yogurt or sour cream to make a creamy vinaigrette.
Add a tsp of soy sauce, chopped scallions and finely chopped fresh ginger.
Touch of lime juice and lime zest.
