4 egg whites
2/3 C. sugar
3 T. gin
1 1/2 t. grated lime peel
1/4 t. salt
1/4 t. almond extract
1 pkg. (14 oz) flaked coconut
1/2 C. all purpose flour
8 oz. white baking chocolate, melted

Directions:

Preheat oven to 350º. In a small bowl, whisk the first 6 ingredients until blended. In a large bowl, toss coconut with flour; stir in egg white mixture.

Drop by tablespoonfuls 2 in. apart onto greased baking sheets. Bake 15 - 18 minutes or until tops are light brown. Remove from pans to wire racks to cool completely.

Dip bottoms of macaroons into melted chocolate, allowing excess to drip off. Place on waxed paper; let stand until set. Store in an airtight container.
