Graham cracker crust
Coconut crust
12-14 vanilla filled sandwich cookies crushed (about 1 cups)
1 cup sweetened flaked coconut toasted
6 Tablespoons butter
8 ounces cream cheese
1 can sweetened condensed milk
cup lime juice
optional: 1 teaspoons Rum
1 Tablespoon flaked coconut

Graham Cracker Crust or
Coconut Crust:
Mix all ingredients together and press into pie plate bottom and sides. Refrigerate 30 minutes. Then pour lime mixture into pie shell. Keep refrigerated.
Beat softened cream cheese and sweetened condensed milk with mixer on medium speed until fluffy.
Add lime juice, and if desired rum stirring to combine. Pour into graham crust or coconut crust. Sprinkle with coconut.
