1 1/2 cups all-purpose flour
1 cup whole wheat flour
2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon salt
2 teaspoons paprika
1 teaspoon chili powder
1/2 teaspoon chipotle powder
¼ teaspoon ground cayenne pepper (optional)
2 cups soymilk or other nondairy milk
1 ripe mango, finely chopped (about 1 cup)
3/4 cup sugar
1/4 cup plus 2 tablespoons canola oil
1 teaspoon vanilla extract

Directions:

Combine the all-purpose flour, whole wheat flour, baking powder, baking soda, salt, paprika, chili powder, chipotle, and cayenne in a large bowl and stir with a whisk. Thoroughly mix the soymilk, mango, sugar, oil, and vanilla extract in a medium bowl. Pour into the flour mixture and stir just until blended. Preheat the waffle iron for 3 to 5 minutes and spray both grids with oil. Pour or ladle the batter into the center of the iron, covering no more than two-thirds of the iron’s surface for the first waffle. Adjust the amount as needed for subsequent waffles. Bake each waffle for 4 to 5 minutes, or until it can be removed easily.
