Satay Tofu Recipe

1 block extra firm tofu, drained and pressed

Marinade
1 teaspoon black pepper
1 teaspoon ground cumin
1 teaspoon ground coriander
½ teaspoon ground turmeric
1 teaspoon minced garlic
1 tablespoon sugar
1 tablespoon peanut or vegetable oil
1 tablespoon soy saucepan1 tablespoon lemon juice
1 teaspoon fish sauce or vegetarian fish saucepan

Directions:

Cut the tofu into large squares. Mix all the marinade ingredients and add to the tofu, turning gently to make sure all of the tofu is covered. Place in a covered bowl or plastic bag and marinate in the refrigerator overnight.

Skewer the tofu on metal or bamboo skewers. If using bamboo, soak the skewers for 30 minutes before using. Grill or broil for 4-5 minutes, then turn and repeat on the opposite side. It should be firm when ready and the edges may be a bit browned. Serve with peanut sauce and rice.
