1 cup bulgur wheat
1 cup boiling water

2 medium tomatoes, finely chopped
1 cucumber, seeded and finely chopped
2-3 green onions, finely chopped
1 bunch parsley, finely chopped (seriously, the whole bunch)
1-2 cloves garlic, minced
3-4 Tbsp good olive oil
juice of 1-2 medium lemons
1 tsp. ground coriander
salt/pepper

In large bowl, pour boiling water over bulgur wheat, let stand until water is absorbed (30 minutes) While waiting,
prepare the chopped vegetables and parsley.
Stir in chopped tomatoes, cucumber, onion, garlic and parsley. Add lemon juice, olive oil and coriander.
Season to taste with salt/pepper. Add more lemon juice if you like it a little tart. I sometimes even grate
in a little lemon zest.

(Note: you can really play with the recipe if you're brave: substitute lime for lemon juice, add some chopped mint, seeded and finely chopped sweet peppers, diced celery. You could make it Southwestern by subbing in chopped cilantro for the parsley, and add in some chopped green chilies and/or jalapenos. You can substitute quinoa or couscous for the bulgur wheat. It's all good...)
