4 large tomatoes
1/4 cup balsamic reduction
salt and ground pepper to taste
1 pound fresh mozzarella
extra virgin olive oil
fresh basil, cut into thin strips

Directions:
Directions:
Cut tomatoes into 1/4 inch thick slices.
Cut mozzarella into 1/4 inch thick slices.
Alternate the tomato and cheese slices on serving plates.
Sprinkle with salt and pepper.
Drizzle with balsamic reduction and olive oil
Sprinkle with basil strips on top.
Let salad sit for 15 minutes to allow flavors to develop, then serve.

*To make balsamic reduction:
Pour 1 cup balsamic vinegar into non-reactive sauce pan. Boil and reduce to 1/4 cup.
