1 tbsp. Butter
1 tbsp. Olive Oil
1 sm. Onion, chopped
1 28oz can Italian Plum tomatoes, mashed with your hands.
1 c. Whipping Cream
¼ c. Vodka
¼ tsp. Red Pepper Flakes
1 lb. Penne Pasta
Fresh Parmesan

Melt butter and oil in a heavy saucepan over medium heat, Add onion and sauté until translucent, about 8 minutes. Add tomatoes and cook until almost no liquid is remains. Stirring frequently, about 25 minutes. Add cream, vodka, and red pepper; boil until thickened to sauce consistency, about 2 minutes. Cook pasta in salted water until tender but still firm. Drain well and transfer to a boul. Por sauce over pasta and toss. Sprinkle with Parmesan Cheese.
