8 cups small yellow squash
2 large onions chopped
add carrots if desired


Cover with ice water and 6 tbsp. salt. Let stand 40 mins. to hour.

While this is soaking. Chop 4 bell peppers and bring to boil in solution of.

2 cups vinegar
3 cups sugar
2 tsp. celery
2 tsp. mustard seed

Drain and rinse vegetable from water. Add to vinegar solution and let mixture boil 5 minutes or longer. Pack in jars and seal.
