Meat Mixture:
1½ lbs. lean ground beef
½ Cup chopped onion
¼ Cup dry bread crumbs
1 egg
¼ Cup ketchup
1 tsp. salt
¼ tsp basil leaves
⅛ tsp. pepper

Filling:
¾ Cup water
2 Tablespoons margarine
½ tsp. salt
⅓ Cup milk
1½ Cups mashed potato flakes
1 egg
¼ Cup shredded cheddar cheese
Directions:
Directions:
Heat oven to 350º. Grease 9x5 inch pan. Combine meat mixture ingredients; press half into pan.
For potato filling: heat water, margarine, and salt to boiling. Remove from heat. Add milk and potato flakes mixing well. Stir in egg and cheese. Spread over meat. Top with remaining meat. Bake 50 to 60 minutes. Let cool 5 minutes. Can be inverted onto a serving plate. Spread top with additional catsup if desired.
You may substitute your favorite meatloaf recipe for the meat mixture.
