½ c. butter cubed
2 T. dried rosemary
2 T. minced parsley
3 minced cloves garlic
1 tsp. salt
½ tsp. pepper
1 roasting chicken
6 small red potatoes halved
6 medium carrots, halved and cut into 2 in. pieces

Directions:
Directions:
Melt butter and mix seasonings. Place chicken breast side up on roasting pan. Place potatoes, carrots, and onions around chicken. Pour mixture over chicken and vegetables. Cover and bake at 350º for 1 ½ hours, basting every 30 min. Uncover and bake 30-60 min. longer reaching 170-175º on thighs. Let stand 10 min. before carving.
