4 lb. pork tenderloin or two small pork tenderloins
4 jalapeno peppers, cored and minced
1 c. cream cheese
1 c. grated cheddar cheese
1 T. chili powder
10-12 bacon slices

Directions:
Directions:
Trim tenderloins of fat and membrane. Slice tenderloin in half lengthwise like a sandwich roll without going all the way to other side. Mix cream cheese, cheddar, chili powder, and jalapenos. Spread cheese and pepper mixture in the opening of the tenderloin and close. Wrap the tenderloin with bacon and place with the cut side facing up. You can put this on a smoker and smoke to 165º. If cooking in an oven cook at 350º covered for 2 ½ hours checking the internal temperature. Let rest for 10 min. and slice in 1 in. slices.
