1 1/2 lbs tomatillos
1/2 C. chopped white onion
2 cloves of garlic (more, or optional)
1/2 C. cilantro leaves
1 T. fresh lime juice
2 Jalapeno peppers or 2 Serrano Peppers, stemmed, seeded, and chopped

Directions:
Directions:
Remove papery skin from tomatillos

Roast, grill or boil the tomatillos. Roasting or grilling is preferable.

Place cooked tomatillos, lime juice, onions, garlic, cilantro, peppers in a food processor. Pulse until all ingredients are finely chopped and mixed.

Season to taste with salt and cool in the refrigerator.
