4-5 male bell peppers
1 cup Minute rice
1 lb ground beef
1 medium onion
1 can diced tomatoes
ketchup

Directions:
Directions:
Cut the stem out of the pepper, remove seeds and wash thoroughly. In a glass dish, cover the peppers with saran wrap and microwave 2 min. Brown the ground beef with the onion and rice. Stir. Add tomatoes. Stir and cover so rice can absorb the juices (about 5 min).
Drain peppers and fill with the beef mixture. Cover the peppers with ketchup and put in 350º oven to brown - about 15 min.

OK. I just learned there are male and female bell peppers. The female has 3 lobes and the male has 4. Female is for fresh salads and fajitas because it has a stronger taste. Male peppers are milder and are good in meatloaf or stuffed peppers.
