Ingredients: 5 lbs of potatoes (I use russet or other baking potatoes) 1/2 c sweet pickle juice 4 T mayonaisse 1 small jar of Vlasic sweet pickles or sweet gherkins (diced) 1 small white onion (diced) 7 eggs hard-boiled (diced) salt / pepper (to taste) yellow mustard (to taste)

Directions:1. Peel potatoes. Cut into small cubes. Boil --- this is tricky. The potatoes need to be soft, but not too mushy. It should probably take about 15 minutes at a boil. Keep watching them and don't overcook. 2. Hard boil the eggs. Put in pan and cover with water. Bring to a boil and boil for 10 minutes. Cool under cold running water and allow to cool. Peel and dice. 3. Mix all the ingredients. Keep refrigerated. |

Notes: Nanny used to make this and I loved it! It's kind of unusual to have chunks of sweet pickles in Potato Salad, but that's what I loved about it! This recipe make A LOT---you can halve the recipe or adjust it.
