Key Lime Pie

4 - eggs separated
1 - 15 oz. can Sweetened condensed milk
1/2 cup key lime juice
1 - 8” pastry pie shell baked (regular pie crust not graham)
1/2 cup sugar
1/2 teaspoon vanilla
1/4 teaspoon cream of tartar

Beat yolks until thick and lemon colored
Fold in condensed milk and lime juice
Pour into baked pie shell

Whip egg whites with mixer until stiff
Gradually beat in sugar a little at a time
Add vanilla and cream of tartar

Spread meringue over pie sealing to the crust use a spoon to make peaks in meringue

Bake at 350° about 15 minutes or until meringue is golden


For 1 pie crust
1 cup flour
1/4 teaspoon salt
1/3 cup crisco
2-3 tablespoons water
Mix well roll out on floured cutting board
Bake at 400° until lightly brown

The first time I went to the keys I was 5 years old. It was me my mom and dad and my grandmother. There was a bakery across the street from the motel. They had the best pie!! My grandmother was not shy and she asked for the recipe, they gave it to her! We have been making this pie ever since. We consider this to be real key lime piie.
