1/2 cup light olive oil
1 egg
1/3 cup vanilla coffee creamer (liquid)
2-3 ripe bananas, mashed
1/3 cup brown sugar
1 Tbsp. baking powder
1 tsp. salt
2 cups flour (I substitute some whole wheat flour for the white flour)

Directions:
Directions:
Mix first 4 ingredients in a large mixing bowl.
Add brown sugar, baking powder and salt until blended.
Add 1/2 cup flour at a time to make a soft batter.
Pour into a greased loaf pan.
Bake at 350 for 40 minutes or until done.
