2 egg whites
1 c brown sugar
2 cups cornflakes
½ c chopped nuts
1 c flaked coconut
½ tsp vanilla (or almond flavor)

Directions:
Directions:
Beat egg whites until stiff peaks form. Gradually add sugar. Fold in cornflakes and coconut and flavoring.
Drop by spoonfuls onto greased cookie sheet. Bake in 350 degree oven for 15 to 20 minutes. Immediately remove from cookie sheet to cool.

Cornflake Cookies, a very unexciting name for a sweet, crunchy delightful treat. I vividly remember my first taste of this cookie when I was about 8 years old. We had a reception in my Grandfather
Shott's back yard. My Aunt Barb had eloped, and was now home with her new husband, Uncle Joe. Exciting stuff for a young girl. But, what I remember most of all is the sweet crunch of these cookies. A bit of trivia which made people laugh: Aunt Barb Shott was now Aunt Barb Beer.
