1 (3 to 4#) chicken
1 tsp. salt
1 tsp. pepper
2 c. buttermilk
self-rising flour
veg. oil

Directions:
Directions:
Sprinkle chicken with salt and pepper. Place chicken in a shallow dish or zip top plastic bag and add buttermilk. Cover or seal, chill at least 2 hours.
Remove chicken from buttermilk. Dredge chicken in flour.
Pour veg. oil in deep frying pan or Dutch Oven until have about 1 inch depth of oil. Heat to 360.
Add flour coated chicken to hot oil. Cover and cook apporx. 6 minutes. Uncover and cook another 9 minutes. Turn chicken, cover, cook 6 minutes. Uncover and cook 5 to 9 minutes, turning chicken the last 3 minutes.
