Pastry for 2 crust pie
2 cans pitted tart cherries with ⅓ cup juice reserved
2 TBS quick-cooking tapioca
tsp almond extract
1 cup sugar
2 tsp lemon juice
2 TBS butter cut in cubes

Directions:
Directions:
Reheat oven to 425
Combine fruit, tapioca, salt, sugar and almond extract and let stand for five minutes. Spoon mixture into prepared crust and dot with butter. Cut top crust into inch strips and do a lattice top. Foil the crust edges to protect from burning.

Bake for 40 minutes.
Cool on wire rack. Serve with vanilla ice cream.
