¼ cup olive oil
¼ cup finely chopped onion
2 tsp. finely minced garlic
2 cups canned tomatoes with tomato paste
2 tsp. dried oregano
¼ tsp. dried hot red pepper flakes
¼ cup plus 2 tbsp. finely chopped parsley
salt and pepper
4 filet red snapper
¼ lb. feta cheese

Directions:
Directions:
Preheat over to 425º. Heat 2 tbsp. of oil in saucepan. Add onion and garlic, cook until onion is wilted. Add the tomato and paste, oregano, pepper flakes, parsley, salt and pepper. Cook 10 minutes. Put remaining oil in dish, add fish, pour tomato mixture over all and bake 25 minutes.
Serve with warm pita bread.
