Cookie batter:
⅔ c. shortening
⅔ c. sugar
2 eggs
1 tsp. vanilla
1 c. pineapple filling
1 tsp. grated lemon peel
2 c. sifted flour
1½ tsp. baking powder
½ tsp. salt

Filling:
¼ c. sugar
1 T. corn starch
crushed pineapple

Cookie:
Cream shortening, sugar, add eggs, beat well. Stir in vanilla, lemon peel. Sift flour, baking powder, salt together. Stir into creamed mixture. Chill
Roll out on lightly floured board to ⅛ inch thick. Cut dough with 2½ inch cutter. Place half of the circles on an ungreased baking sheet. Spread teaspoon of filling almost to edges. Cut slits in remaining circles and place over filling. Seal with fork. Bake in 400º oven 8-10 minutes.

Filling:
Cook sugar, cornstarch and pineapple till thick. Cool.
