20 - 24 Chincoteague oysters
2 cups of cake flour ( Or Use 2/3 cup all-purpose flour and add 1/3 cup corn starch)
2 cups of cornmeal
1 T. Old Bay seasoning
1 T. garlic salt
1 T. onion salt
1 tsp. dried oregano, crushed
1 tsp. dried thyme, crushed
1/4 tsp. fresh ground black pepper
Salt to taste

Marinade (see below)

Directions:
1. Rinse off oysters under cool running water. Place rinsed oysters into bowl and cover with the marinade
mix and into the refrigerator for 30 to 40 minutes, longer is ok, but not overnight.
2. Mix all dry ingredients in a clean bowl.
3. Heat oil for frying. Add enough oil to cover the oysters. Fry the oysters to golden brown.
4. Sprinkle the oysters with salt after coming out of the fryer.

Marinade
1 Cup of Buttermilk or Whole Milk
2 Tbsp of Hot Sauce

1. Mix well. Chill in refrigerator for 30-40 minutes
