1/2 c butter
orange peel, rosemary, thyme sage
salt
pepper

preheat oven to 275
place turkey on rack , breast side up
add water to bottom of pan- this will be stock for dressing and gravy

cover with heavy alum foil , tucking around edges welll. roast 10 mins /lb ( 3.5 hrs for 20 lb turkey)

prepare butter with orange , rosemary, seasonings

remove turkey from oven after first stage, remove foil, smear butter mix all over well. increase oven to 350 degrees return to oven and baste every 30 mins until thermometer reads 165-168. usually another 1.5 hours.
