2½ c. sugar
1¼ c. white syrup
2 c. water
2 scant tsp. salt
2 drops oil of spearmint or peppermint
food coloring
1 T. butter

Directions:
Directions:
Put sugar, syrup and water in saucepan, stir until boiling begins. Cover with a lid for a few minutes until steam washes down sides of pan. Continue boiling without stirring until temp reaches 245º on candy thermometer. Remove from heat, add butter and salt.
