1 cup plus 6 tbsp. sugar, divided use
1/4 cup flour
3 tbsp. cornstarch
1/4 tsp. saltº
2 cups water
3 eggs, separated
1 tbsp. butter
1/2 cup fresh or bottled key lime juice
Grated rind of 1 lime or lemon
1 (9-inch) pie shell, baked


Directions:
Directions:
Combine the 1 cup sugar, flour, cornstarch and salt in a saucepan and gradually stir in the water. Cook, stirring constantly, until thickened.

Gradually stir the mixture into the beaten egg yolks, return to low heat and cook, stirring, for 2 minutes.

Stir in the butter, lime juice and rind; cool slightly. Pour into the baked pie shell and cool.

Top with meringue.

1/2 tsp cream of tartar

Beat egg whites and cream of tartar at high speed until foamy; gradually add sugar until stiff peaks form. Spread over filling and bake at 350º until brown.
