One box of brownie mix (family size)
1 container of white frosting
1 tsp. of peppermint extract
Green or red food coloring
½ cup evaporated milk (this is the approximate amount of a small can)
1 12 ounce package of chocolate chips

Directions:
Directions:
Make brownie mix as directed.
Bake in greased 9x13 pan. Cool.
Prepare frosting by adding peppermint flavoring and food coloring.
Spread on top of the brownies and chill.

Topping: Melt and blend chocolate chips and evaporated milk over low heat (in microwave - two minutes on medium, stir, two minutes on medium, stir).
Once melted and blended, spread over mint frosting.
Cut into small squares when chocolate sets.

I remember my mom (Aunt Janice) making these every Christmas. They're very good, but very rich. One year, she put them in the garage to cool. Someone left the garage door open (probably my brother, Jeff) and some squirrels snuck in and ate a good part of the minty brownies before the chocolate layer was put on top. WOW was she angry, hahah. Don't know if Texas ever gets cold enough to cool food in the garage, but beware of little critters who may be interested in your yummy dessert!
