12 slices bacon, diced and fried until crisp
(reserve 6 tablespoons drippings)
3 medium-sized onions, chopped (2 cups)
1 cup less
2 tablespoons cider vinegar
1 1/2 tablespoons sugar
1 1/2 teaspoons salt
1/4 teaspoon pepper
2 to 3 lbs potatoes, cooked, peeled and cut in 1/4 inch slices

Directions:

1. Heat bacon drippings in a skillet. Add onion and cook until tender, stirring occasionally. Stir in vinegar, sugar, salt
and pepper; heat to boiling. Mix in bacon.

.2 Pour over potato slices in a serving dish and toss lightly to coat evenly.

3. Garnish with snipped parsley and paprika.

4. Serve hot
