2 cups milk
1 small can (5 1/2 ounces) evaporated milk
1/2 sup plus 2 T sugar
2 eggs, slightly beaten
1/4 tsp salt
1 T cornstarch
2 cups cooked rice
1/2 raisins (optional)
1/4 tsp nutmeg
1/8 tsp cinnamon
1 tsp vanilla

Directions:
Directions:
Place 1 1/2 cups milk plus evaporated milk and 6 T sugar in top of double boiler. Heat until milk is scalded. In mixing bowl, whisk eggs, add salt and remaining 4 T sugar and whisk again. Slowly pour egg mixture into scalded milk, stirring constantly with wire whisk. Cook 15 to 20 minutes, stirring occasionally. In small bowl, mix reserved 1/2 milk and cornstarch together, slowly pour into milk mixture, stirring constantly until pudding begins to thicken. (Stir constantly or lumps will form). Stir thoroughly and cook 10 to 15 more minutes or until cornstarch flavor is gone. Add cooked rice and cook 7 more minutes. Remove from heat and add raisins, nutmeg, cinnamon, and vanilla.
