Heat olive oil in bottom of large cooking pot. Add onions, oregano,parsley and basil. Cook until onions are soft.
Add garlic and paste stir to brown. Add crushed tomatoes. Cook on low for as long as you can, stirring often to avoid burning the bottom.
Combine ricotta,parmesan,parsley, eggs, salt and pepper.
Brown the meat in a frying pan. Drain off fat.
Boil water for noodles -cook until al dente.
Assemble in a 9x13 inch oblong pan. Add a little sauce to the bottom. Lay in cooked noodles. Cover with sauce. Layer on meat. Drop cheese filling by the spoonfuls evenly over noodles. Sprinkle mozzarella generously over filling. Sprinkle a small amount of Parmesan on top. Repeat. Save enough mozzarella to cover the last layer!
Bake covered at 350º about 60 minutes. Let stand 10 minutes before cutting.
Can be made ahead and refrigerated or frozen.(Thaw before cooking)
