3 Eggs
2 cups sugar
2 cups zucchini peeled and shredded
1 cup vegetable oil
2 tea apoons vanilla 3 cups flour
1 t. Salt 1/4 t baking soda 1 t baking powder
1/2 t cinnamon
1 t nutmeg
1 cup nuts or dates chopped

Directions:

Mix together eggs, sugar, zucchini, oil, and vanilla well.
Add the remaining ingredients and stir well. Bake at 350
for 45-60 mins in 2 greased and floured loaf pans.

I tried adding freshly ground nutmeg to this recipe.
The original recipe had only cinnamon. Gives this recipe
