Cake:
1 Vegetable Oil (Canola)
2 C Sugar
4 Eggs - room temperature
2 C Flour
2 tsp Baking Soda
2 tsp Cinnamon
tsp Salt
3 C grated carrots (a little more is not bad!)
1 C Finely ground walnuts

Frosting:
1 Sticks unsalted butter- room temperature
1 (12oz) Cream Cheese- room temperature
3 tsp Vanilla
3 C Confectioner's Sugar

Directions:
Directions:
Preheat oven to 350. Grease and flour pans, ( i line the layer pans with parchment paper and grease and flour again)

Cake:
Blend oil and sugar; beat in eggs one at a time. Mix dry ingredients together in a separate bowl, add to wet and mix. Add grated carrots and walnuts mix until moist.

Pour into 3 greased and floured 9-inch layer cake pans. Bake for 18-25 minutes. Test with toothpick - nothing sticks, cake is done!
10x13 pan bake for 1 hour 15 minutes.
Small round pans (4) bake for 32-35 minutes.

Frosting:
Cream butter, cream cheese and sugar until smooth. add vanilla.
