Coconut Rice Recipe

1 cup cooked rice
cup grated fresh coconut
3 green chilies (slit or chopped)
1 broken red chili
2 tbsp coconut oil
tsp mustard seeds
tsp cumin seeds
Pinch of hing
Salt to taste
tbsp Chana daal
tbsp urad daal
1 tsp chopped ginger
2 tbsp chopped cashews

1) cook rice, making sure the rice is grainy not mushy. Let it cool.
2) heat oill in pan, add cumin, mustard seed, daals, and cashews.
3) when daal turns golden, add ginger, green chili, curry leaves, and red chili.
4) sprinkle hing. Turn off heat and add coconut, cooked rice and salt per taste. Mix well.
