8 eggs
8 oz. cooked ham, diced
1 C. red bell pepper, diced
1 C. onion, diced
1/4 tsp. salt
1/8 tsp. ground black pepper
2 Tbsp. water

Directions:
Directions:
Preheat oven to 350F. Grease 8 muffin cups or line with paper liners
Beat eggs together in a large bowl. Mix ham, peppers, onion water salt and pepper into the beaten eggs. Pour egg mixture evenly into prepared muffin cups.
Bake in the preheated oven until muffins are set in the middle, 18 to 20 minutes

These are very tasty. And Ange, the peppers could be omitted and some other veggie such as shredded carrots, or even cheese added. Also this recipe is a Paleo recipe.
