2 Cups Self Rising Flour
4 Teaspoons Baking Powder
1/2 Teaspoon Baking Soda
2 Tablespoons Sugar
11/2 Sticks Cold Butter (Shredded)
3/4 Cup to 1 Cup Buttermilk
1/2 Cup Milk
1/2 Cup Sour Cream
2 Tablespoons Shortening
2 Eggs, beaten

Heat oven to 400 degrees. Use your stand mixer to make biscuits. Use your dough hook. In the mixing bowl, let the mixer blend together flour, baking powder, baking soda and sugar on a low rate. Shred butter and mix until mixture is crumbly. Stir buttermilk, eggs and shortening into small bowl. Blend with an immersion blender. Set aside. Pour immersion blend and sour cream into flour. Mix until dough leaves side of bowl and attached to the dough hook. (About 5 minutes) If dough is too dry, mix in 1 - 2 teaspoons additional butter. Spray cooking spray on cabinet and sprinkle flour on cabinet top. Fold dough in half to make layers about 8 times. (ending with dough about an inch and half in size. Final fold, cut biscuits into nine pieces or how many pieces of dough you like. Place on parchment paper the same size as pan. Sprinkle with water to keep bottom of the biscuits soft.
Shape biscuits and pat down to a small square or round and place on greased buttered square pan or 10" Cast iron skillet; place dough touching each other. Push dough down with your knuckles in pan to connect the biscuits. You can use cutters if you would like. Don't twist cutter around before you take out. Just cut down. Place some melted butter on top when biscuits are browning on the top. Bake 12-15 minutes. Place biscuits on broil until golden brown.
