Greek Salad Recipe

Romaine Lettuce
1 red onion
1 red pepper
1 yellow pepper
3 hard boiled eggs
1 cup of black pitted Kalamata olives
1 package of feta cheese
1 cucumber
2 tomatoes
1 jar of artichokes

Line a large platter with romaine lettuce.
Top with red onion slices, chunks of
tomatoes (or halved cherry tomatoes),
slices of red and yellow peppers,
sliced hard boiled eggs, olives, feta
cheese, sliced cucumber and artichokes.


1/2 cup of good quality olive oil
1/4 cup fresh lemon juice
1 tsp. Greek oregano
1/2 tsp. salt
1/2 tsp. black pepper

Shake ingredients in a jar. Pour over salad.
