2 eggs
2 tablespoons sugar
1 cup ricotta cheese
1/2 cup buttermilk
1 teaspoon vanilla
1 cup flour
1/2 teaspoon salt
1 and 1/2 teaspoon baking powder
zest from 1 lemon
fresh blueberries
maple syrup

Directions:
Directions:
Separate egg whites from yolks.
Whisk together egg yolks, sugar, ricotta cheese, buttermilk and vanilla.
Add flour, baking powder, lemon zest and salt.
Beat egg whites until soft peaks form.
Gently fold egg whites into pancake mixture.
Lightly grease non-stick pan over medium heat.
Pour about 1/4 cup batter and spread to form 4 inch pancake.
Add blueberries on top and cook for 2-3 minutes on each side until golden brown.
serve with maple syrup.
