1 package noodles
1 white potato peeled
1 small carrot peeled
1 container follow your heart parmesan shreds(Whole foods has it as well as some major grocery stores)
1 tsp dried mustard
1 tsp garlic powder
1 tsp onion powder
1/4 cup raw cashews( Soaked in water overnight is best)
1 1/2 cups starch water(water from boiled potato and carrot)
1 tsp avocado oil or olive oil
1/4 tsp red pepper (optional)

Directions:
Cook your noodles and set aside.Boil a potato and carrot in a large pot until very soft .Scoop out 1 1/2 cups of the potato, carrot water.Add the water, carrot, potato and all other ingredients to a food processor and blend till very creamy.You can add more water if it looks to thick.Pour over noodles and stir.Heat on very low heat just till warmed(it will scald if to hot) .
