Ingredients:  
Bibb lettuce
Hearts of romaine, chopped
avocados
cherry tomatoes
goat cheese,
hearts of palm
crispy bacon

Dressing:
1 chopped shallot
4 bacon slices, cut into pieces
3 Tbs red wine vinegar
1 tsp bacon grease
salt and pepper

Directions:
Directions:
Mix all salad ingredients together. Refrigerate and top with dressing.

Dressing:
Place bacon in cold saute pan and cook until crisp.
Add shallots and saute until transparent, about 2 minutes
Remove from heat and let cool for 2 to 3 minutes
Add vinegar and scrape bottom of pan to loosed bacon bits
