1 cup almond flour
5 tablespoons cocoa powder
3 large egg whites
1/4 cup sugar

Directions:
Process the confections's sugar, almond flour, and cocoa in a food processor until ground to an extremely fine powder. Beat egg whites and sugar until they form stiff peaks Carefully fold in the cocoa mixture with a spatula, mixing downward to the center of the bowl, then up to the edges and back towards the center, until you obtain a smooth, even texture. Using a pastry bag fitted with a 1/2- inch plain tip, pipe 3/4-inch wide mounds of the macaroon mixture onto a baking sheet lined with baking parchment. Let stand at room temperature for 30 minutes, until a thin film forms on the mounds. Preheat the oven to 350 degrees. Bake the macaroons for about 15 minutes, until the edges of the macaroons are firm and crisp. Cool 5 minutes, then transfer to a wire rack and cool completely.
