3/4 cup whole milk
3-4 teaspoons Earl Grey tea
9 ounces milk chocolate, chopped
6 large eggs
1 3/4 cup heavy cream
3 tablespoons turbinado sugar

Directions:
Directions:
Bring milk to a boil, add tea, remove from heat, and set aside to infuse for 5 minutes. Remove tea, pass through a wire strainer and bring back to a boil. Place chocolate in a heat proof bowl. Pour hot milk unto chocolate and whisk briskly until the chocolate has melted. Preheat the oven to 275 degrees. Beat the egg yolks and add to the chocolate-milk mixture, then add the cream. Place six 4-inch diameter ramekins or creme brulee dishes in a roasting pan. Divide the mixture between dishes. Filled pan with hot water that comes halfway up the dishes and bake in the oven for 30-40 minutes or until custard sets. Chill in the refrigerator overnight, or for at least 6 hours. Sprinkle each custard with 1/2 tablespoon sugar and caramelize with a blowtorch or under a very hot broiler. Serve immediately.
